These Blueberry Oat Pancakes are very low in calories and are great for gastric bypass surgery patients and diabetics as it uses NO sugar.
- 1 cup old fashioned rolled oats
- 1/2 cup low-fat cottage cheese
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup blueberries
- Cooking spray
Combine all ingredients, except blueberries, and process until smooth. Stir in the blueberries. Cook like you’d cook a normal pancake 🙂
